Ingredients

  • 1 pound cooked and cubed corned beef
  • 3 tablespoons butter
  • 3 cups diced potatoes (about 3 medium potatoes)
  • 1 cup chopped red bell peppers
  • 1 cup chopped onion
  • 1 tablespoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 pinch red pepper flakes (optional)

Instructions

  • Start by peeling and dicing your potatoes into small cubes. This helps them cook evenly and get crispy.
  • In your skillet, melt 2 tablespoons of butter over medium heat. Add the diced potatoes, salt, and pepper. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden brown and tender.
  • Once the potatoes are cooked, add the chopped onion and red bell peppers to the skillet. Sprinkle in the Italian seasoning and red pepper flakes if using. Cook for an additional 5 minutes, or until the vegetables are softened.
  • Stir in the cubed corned beef and cook for another 5 minutes, allowing the flavors to meld together. You want the corned beef to heat through and get a little crispy on the edges.
  • In a separate pan, melt the remaining tablespoon of butter over medium heat. Crack the eggs into the pan and cook to your liking—sunny-side up or over easy works beautifully with this dish.
  • Once everything is cooked, serve the corned beef hash on plates, topped with a fried egg. Enjoy the warm, comforting flavors of your Homemade Corned Beef Hash!

Equipment

  • Skillet or frying pan
  • Spatula
  • Knife
  • Cutting Board

Notes

  • For extra crispy potatoes, soak the diced potatoes in cold water for 30 minutes before cooking. This helps remove excess starch.
  • Don’t overcrowd the pan while cooking. If necessary, cook in batches to ensure even browning.
  • Feel free to experiment with different spices, like smoked paprika or garlic powder, for added depth of flavor.
