Ingredients

  • 2 cups long-grain white rice
  • 4 boneless, skinless chicken breasts
  • 1 cup honey
  • 1/2 cup BBQ sauce check for pork-free label
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste
  • chopped green onions for garnish

Instructions

Prepare the Rice

  • Rinse 2 cups of long-grain white rice under cold water until the water runs clear to remove excess starch.
  • In a medium saucepan, combine the rinsed rice with 4 cups of water and a pinch of salt. Bring to a boil over medium-high heat.
  • Reduce heat to low, cover, and simmer for about 15-18 minutes or until the rice is tender and water is fully absorbed.
  • Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Make the Honey BBQ Sauce

  • In a small bowl, whisk together 1 cup honey, 1/2 cup BBQ sauce, 1 tablespoon soy sauce, 1 teaspoon garlic powder, and 1 teaspoon onion powder.
  • Ensure the BBQ sauce is free from any non-compliant ingredients.

Cook the Chicken

  • Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Add chicken breasts and cook for about 5-6 minutes on each side until golden brown and cooked through (165°F/74°C internal temperature).

Glaze the Chicken

  • Reduce heat to low and pour the honey BBQ sauce mixture over the chicken in the skillet.
  • Spoon the sauce repeatedly over the chicken to coat evenly, allowing it to thicken and caramelize slightly for about 3-5 minutes.

Assemble and Serve

  • Spoon a generous portion of fluffy white rice onto each plate.
  • Place a glazed chicken breast on top and drizzle remaining sauce from the pan over the rice and chicken.
  • Garnish with freshly chopped green onions for a fresh, vibrant touch.
