Ingredients

For the Marinade:

  • 4 pieces boneless skinless chicken breast halves
  • ½ cup olive oil
  • ½ cup lemon juice
  • ½ cup Dijon mustard
  • ½ cup honey
  • 3 Tbsp dried minced onion
  • 2 Tbsp oregano
  • 2 tsp paprika
  • 6 cloves garlic, minced
  • ½ tsp cayenne pepper
  • Salt & pepper, to taste

  • Step 1: Prepare the Marinade
    In a mixing bowl, combine the olive oil, lemon juice, Dijon mustard, honey, dried minced onion, oregano, paprika, minced garlic, cayenne pepper, and salt and pepper. Whisk until all the ingredients are well combined, and the mixture is smooth.
  • Step 2: Marinate the Chicken
    Place your boneless skinless chicken breast halves in a resealable plastic bag or a glass container. Pour the marinade over the chicken, ensuring that each piece is thoroughly coated. Seal the bag or cover the container and refrigerate for at least 30 minutes, or up to 4 hours for the best flavor.
  • Step 3: Prepare for Cooking
    When you’re ready to cook, preheat your grill or oven to medium-high heat. If using an oven, you can also preheat it to 400°F (200°C).
  • Step 4: Cook the Chicken
    Remove the chicken from the marinade, letting any excess drip off. If grilling, cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). If baking, place the chicken on a greased baking sheet and bake for 25-30 minutes, or until cooked through.
  • Step 5: Serve and Enjoy
    Once cooked, let the chicken rest for a few minutes before slicing. Serve it alongside your favorite sides, such as a fresh Greek salad or roasted vegetables. You can also use the leftover marinade to drizzle over the top for extra flavor!
