Begin by peeling and slicing the carrots diagonally into pieces about 1/2 inch thick.
In a large skillet, heat the extra virgin olive oil over medium heat for about a minute.
Add the sliced carrots to the skillet. Season with salt and black pepper. Sauté for about 5-7 minutes until they start to soften.
In a small bowl, combine the melted butter and honey. Mix well until fully combined.
Pour the honey and butter mixture over the sautéed carrots. Stir well to coat evenly.
Continue to cook the carrots for an additional 5-10 minutes until tender and the glaze thickens.
Remove from heat and sprinkle with freshly chopped parsley. Serve warm and enjoy!
