Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup homemade Bisquick mix
  • 2 cups milk
  • ½ cup unsalted butter melted and cooled
  • 1 pinch salt
  • 2 teaspoons pure vanilla extract
  • 1 cup sweetened shredded or flaked coconut

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the 4 large eggs until well beaten. Add in the 1 cup of granulated sugar and continue to whisk until fully combined.
  • Add in the 1 cup of homemade Bisquick mix and a pinch of salt, stirring until everything is well incorporated.
  • Slowly pour in the 2 cups of milk and the ½ cup of melted unsalted butter, mixing until smooth.
  • Stir in the 2 teaspoons of pure vanilla extract and the 1 cup of sweetened shredded coconut.
  • Pour the batter into your greased 9-inch pie dish.
  • Place the pie in the preheated oven and bake for about 45-50 minutes, or until the top is golden brown.
  • Allow the pie to cool for at least 30 minutes before slicing. Serve warm or chilled.
