Instant Pot Cauliflower Mac and Cheese

Ingredients

  • 1 head Cauliflower medium/large, cut into florets
  • 16 ounces Whole wheat pasta elbows, shells, or rotini
  • 1 tablespoon Unsalted butter
  • 1 teaspoon Kosher salt
  • 2 ounces Reduced-fat cream cheese
  • 2 cups Freshly grated cheese divided, such as cheddar, gruyere, provolone, fontina, gouda
  • 8 to 12 ounces 2% evaporated milk
  • 1 teaspoon Garlic powder
  • 1 teaspoon Ground black pepper

Instructions

  • Start by washing and cutting your cauliflower into small florets.
  • In your Instant Pot, add the whole wheat pasta and cauliflower florets. Pour in enough water to cover, then stir in the kosher salt. Secure the lid and set to manual high pressure for 4 minutes.
  • Once the cooking time is complete, carefully perform a quick release of the steam. Open the lid once the pressure has been fully released.
  • Add the unsalted butter, reduced-fat cream cheese, and 8 ounces of your chosen melted cheese to the pot. Pour in 8 to 12 ounces of evaporated milk and stir until well combined.
  • Sprinkle in the garlic powder and ground black pepper. Stir until the cheese has melted and the sauce is smooth and creamy.
  • For an extra cheesy finish, sprinkle the remaining cheese on top and allow it to melt before serving.
