Ingredients

For the Chicken:

  • 4 large chicken breasts trimmed and cut into lengthwise strips
  • 2 lemons zest and juice
  • 1 tablespoon Greek seasoning
  • 2 tablespoons extra-virgin olive oil
  • 1/4 cup chicken stock
  • 1/2 teaspoon Greek oregano
  • 1/2 teaspoon fresh-ground black pepper

  • Step 1: Prepare the Chicken. Start by trimming the chicken breasts and cutting them into lengthwise strips.
  • Step 2: Marinate the Chicken. In a mixing bowl, combine the chicken strips with the zest and juice of the lemons, Greek seasoning, extra-virgin olive oil, chicken stock, Greek oregano, and fresh-ground black pepper. Mix well and allow to marinate for at least 15 minutes.
  • Step 3: Sauté in the Instant Pot. Set your Instant Pot to the sauté function and heat it up. Add a splash of olive oil and then the marinated chicken strips. Sauté for 2-3 minutes until lightly browned.
  • Step 4: Pressure Cook the Chicken. Add any remaining marinade, seal the lid, and cook on high pressure for 10 minutes. Allow the pressure to release naturally for 5 minutes before quick release.
  • Step 5: Shred the Chicken. Carefully remove the chicken from the pot and shred it using two forks or tongs.
  • Step 6: Assemble the Tacos. Warm taco shells and fill each with shredded chicken. Top with garnishes like diced tomatoes, cucumber, red onion, feta cheese, or fresh herbs.
