Ingredients

  • 1 cup whole milk
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder

  • 3 large eggs room temperature
  • 1 can Non-stick baking spray
  • 1 stick butter room temperature
  • ½ cup blackberry jam
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter room temperature and cut into pieces
  • ½ cup heavy cream
  • 1 teaspoon salt

Instructions

  • Step 1: Preheat your oven to 425°F (220°C). This high temperature is crucial for creating that signature rise.
  • Step 2: Lightly spray your popover pan with non-stick baking spray. This will help the popovers release easily once they are baked.
  • Step 3: In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt until evenly combined.
  • Step 4: In another bowl, whisk the eggs and milk together until smooth. Gradually add the melted butter, mixing well.
  • Step 5: Pour the wet ingredients into the dry mixture, stirring gently until just combined. Be careful not to overmix; some lumps are okay!
  • Step 6: Pour the batter into each cup of the popover pan, filling them about halfway. This allows room for the popovers to rise.
  • Step 7: Place the pan in the preheated oven and bake for about 25-30 minutes or until the popovers are puffed and golden brown. Avoid opening the oven door during the first 20 minutes to ensure they rise properly.
  • Step 8: Once baked, remove the popovers from the oven. Let them cool for a minute before gently removing them from the pan. Serve warm with blackberry jam and a sprinkle of sugar for sweetness.
