Ingredients

For the Salad:

  • 1 bunch curly kale stemmed
  • 1 teaspoon extra-virgin olive oil
  • to taste Sea salt
  • 5 cups chopped romaine lettuce
  • 1 cup homemade croutons
  • shaved Parmesan cheese or vegan Parmesan
  • optional Roasted chickpeas
  • 1 avocado diced, optional

For the Dressing:

  • 1 cup Healthy Caesar Dressing
  • 1 cup Vegan Caesar Dressing

  • Step 1: Prepare the Kale - Remove the stems from the curly kale. Tear or chop the leaves into bite-sized pieces. Rinse them under cold water and use a salad spinner to dry thoroughly.
  • Step 2: Massage the Kale - In a large mixing bowl, drizzle the kale with extra-virgin olive oil and a pinch of sea salt. Massage the kale for about 2-3 minutes until tender.
  • Step 3: Chop the Romaine - Chop the romaine lettuce into bite-sized pieces and add it to the bowl with the kale.
  • Step 4: Add the Dressing - Pour your choice of Caesar dressing over the salad and toss until evenly coated.
  • Step 5: Add Croutons and Cheese - Fold in the homemade croutons and shaved Parmesan cheese. Add optional toppings if desired.
  • Step 6: Serve Immediately - Serve the salad immediately for the best texture.
