Ingredients

  • 4 pieces boneless skinless chicken breasts (about 1/2 lb. each)
  • 2 tablespoons paprika
  • 1/4 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon Italian seasoning herbs
  • 1 tablespoon dried thyme
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons canola oil (divided)

  • Step 1: Prepare the Spice Mix - In a mixing bowl, combine the paprika, cumin, cayenne pepper, Italian seasoning, dried thyme, onion powder, garlic powder, kosher salt, and ground black pepper. Mix well until all the spices are evenly blended.
  • Step 2: Season the Chicken - Pat the chicken breasts dry with a paper towel. Rub the spice mixture generously over each chicken breast, ensuring every inch is coated in that delicious seasoning.
  • Step 3: Heat the Skillet - Heat 2 tablespoons of canola oil in a cast-iron skillet over medium-high heat. Allow the oil to become hot but not smoking.
  • Step 4: Cook the Chicken - Carefully place the seasoned chicken breasts in the skillet. Cook for about 5-7 minutes on one side without moving them.
  • Step 5: Flip and Finish Cooking - Using tongs, flip the chicken breasts and add the remaining tablespoon of canola oil to the skillet. Cook for an additional 5-7 minutes or until the internal temperature reaches 165°F (75°C).
  • Step 6: Rest and Serve - Once cooked, remove the chicken from the skillet and let it rest for about 5 minutes. Slice and serve with your favorite keto-friendly sides.
