Keto Blondies (Dairy Free)

These Keto Blondies are a delicious, low-carb treat that satisfies your sweet cravings without dairy!

Ingredients

  • 2 cups almond flour
  • 1 teaspoon baking powder
  • 1 cup golden monk fruit sweetener
  • 2 large eggs or vegan substitutes (see notes)
  • 1/2 cup butter or dairy-free butter softened
  • 1 teaspoon vanilla extract
  • 1/2 cup keto chocolate chips
  • 1/2 cup mix-ins (nuts, seeds, chocolate chunks, etc.)

Instructions

  • Step 1: Preheat your oven to 350°F (175°C).
  • Step 2: Line an 8x8-inch baking pan with parchment paper.
  • Step 3: In a large mixing bowl, combine almond flour and baking powder. Whisk until well combined.
  • Step 4: In another bowl, beat together softened butter and golden monk fruit sweetener until creamy. Add eggs (or vegan substitutes) and vanilla extract, mixing until smooth.
  • Step 5: Gradually add the dry mixture to the wet mixture. Stir until just combined.
  • Step 6: Gently fold in keto chocolate chips and any additional mix-ins you desire.
  • Step 7: Pour the blondie batter into the prepared baking pan and bake for 25-30 minutes.
  • Step 8: Allow to cool for about 10 minutes before lifting out using parchment paper. Let cool completely before cutting into squares.

Notes
