Ingredients

For the Chicken:

  • 2-3 pieces Chicken breasts or thighs cut into bite-sized pieces
  • 0.5 medium Onion diced
  • 4 ounces Unsalted butter or ghee
  • 5 tablespoons Minced garlic
  • 15 ounces Tomato sauce
  • 2 tablespoons Tomato paste
  • various Spices paprika, chili powder, curry powder, cumin, and salt
  • 0.25 cup Cilantro chopped
  • 1 cup Heavy whipping cream

Instructions

Instructions:

  • Step 1: Prepare the Chicken. Cut your chicken breasts or thighs into bite-sized pieces to ensure even cooking and flavor absorption.
  • Step 2: Sauté the Aromatics. Set the Instant Pot to sauté, melt the butter or ghee, add the diced onion, and sauté until transparent (about 3-4 minutes). Stir in the minced garlic for another minute until fragrant.
  • Step 3: Add the Chicken. Add the chicken pieces to the pot, stirring to coat them in the butter mixture. Cook for about 5 minutes until browned on the outside.
  • Step 4: Stir in the Tomato Ingredients. Add the tomato sauce and tomato paste, mixing well. Stir in the spices to create a rich flavor.
  • Step 5: Pressure Cook. Seal the Instant Pot lid and set to high pressure for 10 minutes. Allow for a natural pressure release for 5 minutes before a quick release.
  • Step 6: Add the Cream. Once pressure is released, stir in the heavy whipping cream, adjusting seasoning as needed.
  • Step 7: Serve. Garnish with chopped cilantro and serve hot, ideally with cauliflower rice or steamed vegetables.
