Ingredients

  • 2.5 cups non-dairy milk (almond or coconut milk)
  • 2/3 cup chia seeds
  • 2 tablespoons sugar-free sweetener (erythritol, stevia, or monk fruit)
  • 1 cup fresh blueberries
  • 1/4 cup cacao nibs
  • 1/4 cup hemp hearts

Instructions

  • In a mixing bowl, whisk together the non-dairy milk, chia seeds, and sugar-free sweetener until well combined.
  • Allow the mixture to sit for about 5-10 minutes to allow the chia seeds to absorb the liquid.
  • Whisk the mixture again to break up any clumps of chia seeds.
  • Cover the bowl with plastic wrap or transfer the mixture into a storage container and refrigerate for at least 2 hours, preferably overnight.
  • When ready to serve, give the pudding a good stir and spoon it into bowls or jars, topping with fresh blueberries, cacao nibs, and hemp hearts.
