Ingredients
2.5
cups
non-dairy milk
(almond or coconut milk)
2/3
cup
chia seeds
2
tablespoons
sugar-free sweetener
(erythritol, stevia, or monk fruit)
1
cup
fresh blueberries
1/4
cup
cacao nibs
1/4
cup
hemp hearts
Instructions
In a mixing bowl, whisk together the non-dairy milk, chia seeds, and sugar-free sweetener until well combined.
Allow the mixture to sit for about 5-10 minutes to allow the chia seeds to absorb the liquid.
Whisk the mixture again to break up any clumps of chia seeds.
Cover the bowl with plastic wrap or transfer the mixture into a storage container and refrigerate for at least 2 hours, preferably overnight.
When ready to serve, give the pudding a good stir and spoon it into bowls or jars, topping with fresh blueberries, cacao nibs, and hemp hearts.
