Ingredients

  • 2 large bell peppers sliced lengthwise into wide strips
  • 1 pound thinly sliced beef (ribeye or flank steak works great)
  • 1 medium onion thinly sliced
  • 1 cup provolone cheese shredded
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Turkey bacon optional, for added flavor

Instructions

Step 1: Prepare the Bell Peppers

  • Begin by washing the bell peppers thoroughly. Slice them lengthwise into wide strips that are sturdy enough to hold the filling but flexible enough to roll. Set aside.

Step 2: Cook the Turkey Bacon (Optional)

  • If you’re using turkey bacon, cook it in a skillet over medium heat until crispy. Remove from the pan, drain on paper towels, and chop into bite-sized pieces.

Step 3: Sauté the Onions and Beef

  • Heat olive oil in a large skillet over medium-high heat. Add the sliced onions and cook until they start to soften and caramelize, about 5 minutes. Then, add the thinly sliced beef to the skillet. Season with garlic powder, onion powder, salt, and pepper. Stir frequently and cook until the beef is browned and cooked through, about 4-6 minutes. If you added turkey bacon, toss it in now to combine the flavors.

Step 4: Assemble the Roll Ups

  • Lay out the bell pepper strips on a clean surface. Spoon a generous amount of the beef and onion mixture onto each strip. Sprinkle shredded provolone cheese on top while the filling is still hot, allowing it to melt slightly.

Step 5: Roll and Serve

  • Carefully roll up each bell pepper strip around the filling. You can secure the roll ups with a toothpick if needed. Serve immediately while warm. These roll ups are perfect on their own or paired with a crisp side salad for a complete meal.
