  • 1 pound cubed boneless skinless chicken breast
  • 1 teaspoon salt
  • 2 teaspoons lemon pepper
  • 2 cups chicken broth
  • 1 cup white rice
  • 3 tablespoons lemon juice
  • 3 tablespoons melted butter
  • 1 tablespoon lemon zest
  • 1 tablespoon minced garlic
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon pepper
  • 1 teaspoon thyme
  • 1 lemon thin slices

  • Preheat your oven to 375°F (190°C) to prepare for baking your Lemon Chicken Casserole.
  • In a mixing bowl, combine the cubed chicken breast with 1 teaspoon of salt, 2 teaspoons of lemon pepper, and 1 teaspoon of dried basil. Toss to coat the chicken evenly with the seasonings.
  • In your 9x13-inch baking dish, pour in the melted butter, followed by the seasoned chicken. Spread the chicken evenly across the bottom of the dish.
  • Sprinkle the uncooked white rice evenly over the chicken. Next, pour in the chicken broth, ensuring the rice is completely submerged.
  • In a small bowl, whisk together the lemon juice, lemon zest, minced garlic, onion powder, remaining salt, pepper, and thyme. Pour this mixture over the rice and chicken in the baking dish.
  • Arrange the thin slices of lemon on top of the casserole for an added zesty flavor and beautiful presentation.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes. After 40 minutes, remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the rice is tender.
  • Once baked, remove the casserole from the oven and let it cool for a few minutes before serving. Fluff the rice with a fork and enjoy your Lemon Chicken Casserole warm!
