Ingredients

For the Lemon Loaf:

  • 1 1/2 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter room temperature
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 1/2 tablespoons lemon zest
  • 3 tablespoons fresh lemon juice
  • 1/2 cup milk

For the Glaze:

  • 1 1/4 cups powdered sugar
  • 1 to 2 tablespoons fresh lemon juice for glaze

Instructions

Instructions:

  • Step 1: Preheat your oven to 350°F (175°C).
  • Step 2: Grease your loaf pan with butter or line it with parchment paper.
  • Step 3: In a medium mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  • Step 4: In a large mixing bowl, beat the room-temperature unsalted butter and granulated sugar until light and fluffy, about 3-5 minutes.
  • Step 5: Add the eggs one at a time, mixing well after each addition.
  • Step 6: Stir in the lemon zest and fresh lemon juice.
  • Step 7: Gradually add the flour mixture alternating with the milk, starting and finishing with flour. Mix until just combined.
  • Step 8: Pour the batter into the prepared loaf pan and bake for about 50-60 minutes, or until a toothpick comes out clean.
  • Step 9: Let the loaf cool in the pan for about 10 minutes, then transfer to a cooling rack.
  • Step 10: Whisk together the powdered sugar and 1 to 2 tablespoons of fresh lemon juice for the glaze.
  • Step 11: Drizzle the glaze over the cooled loaf and allow to set before slicing.
