Ingredients

  • 1 can (10 ounces) diced tomatoes with green chiles
  • 1 packet taco seasoning
  • 1 cup corn kernels fresh or frozen
  • 2 cups tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 avocado diced
  • 1/4 cup chopped fresh cilantro

Instructions

Step 1: Prepare the Beef Mixture

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent and fragrant, about 3-4 minutes. Stir in the minced garlic and cook for another 30 seconds until aromatic. Add the ground beef, breaking it apart, and cook until fully browned, about 6-8 minutes. Drain excess fat if needed.

Step 2: Season and Add Veggies

  • Sprinkle taco seasoning over the cooked beef and stir to combine. Pour in black beans, diced tomatoes with green chiles, and corn kernels. Mix well and simmer for 5 minutes to meld flavors. Remove from heat.

Step 3: Assemble the Casserole

  • Preheat oven to 375°F (190°C). In a 9x13-inch baking dish, spread half the tortilla chips evenly. Spoon half the beef mixture over chips, then sprinkle half the cheddar cheese. Repeat layers with remaining chips, beef mixture, and cheese.

Step 4: Bake and Garnish

  • Bake casserole for 15-20 minutes until cheese is melted and bubbly. Let cool slightly. Dollop sour cream on top, then scatter diced avocado and fresh cilantro evenly. Serve immediately.
