Preparation

  • Start by washing and peeling the russet potatoes if you prefer. Slice each potato into fries about 1/4 to 1/2 inch thick to ensure even cooking. Rinse the fries under cold water to remove excess starch, which helps them crisp up better. Pat them completely dry with paper towels to avoid oil splatters during frying.

Frying the Fries

  • Heat vegetable oil in a deep frying pan or pot to 350°F (175°C). Carefully add the fries in batches, avoiding overcrowding. Fry them until golden and crispy, about 4-6 minutes per batch. Use a slotted spoon to transfer fries to a paper towel-lined plate to drain excess oil. Immediately season with salt, pepper, garlic powder, and paprika while still hot for maximum flavor absorption.

Cooking Turkey Bacon

  • While the fries are cooking, heat a separate skillet over medium heat and cook turkey bacon slices until crispy. Drain on paper towels and crumble once cool enough to handle.

Assembling and Baking

  • In a large cast iron skillet or oven-safe pan, layer the hot fries evenly. Sprinkle shredded cheddar cheese generously over the fries and then top with crumbled turkey bacon. Place the skillet in a preheated oven at 375°F (190°C) for 5-7 minutes, or until the cheese melts completely and bubbles.

Finishing Touches

  • Remove the skillet from the oven and dollop sour cream over the fries. Scatter chopped green onions on top for a fresh, vibrant finish. Serve immediately while everything is warm and melty.
