Ingredients

  • 2 cups white whole wheat flour
  • 2 teaspoons cornstarch
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sweetener of choice (like stevia or erythritol)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips of choice

Instructions

  • Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper to prevent sticking.
  • In a large mixing bowl, whisk together the white whole wheat flour, cornstarch, baking soda, baking powder, and salt until well combined.
  • In another bowl, mix the granulated sweetener, unsweetened applesauce, melted coconut oil, and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients and stir until just combined. Avoid overmixing to keep the cookies tender.
  • Gently fold in the chocolate chips of your choice.
  • Using a spoon or cookie scoop, drop tablespoons of dough onto the prepared baking sheet. Bake for 10-12 minutes or until the edges are lightly golden.
