Mac and Cheese Steak Fajitas

These Mac and Cheese Steak Fajitas are a delicious twist on two classics, bringing creamy comfort and zesty flair together!

Ingredients

For the Fajitas:

  • 1 box Velveeta Shells and Cheese Bold (chipotle or jalapeno)
  • 1 tablespoon olive oil
  • 1 pound steak (ribeye, sirloin, filet, or New York Strip) cut into bite-sized pieces
  • 1 red onion thinly sliced
  • 1 red or green bell pepper thinly sliced
  • 8 pieces fajita size flour tortillas
  • 1 avocado optional, diced
  • Chopped cilantro optional, for garnish

Instructions

Stepwise Method:

  • Begin by cutting your choice of steak into bite-sized pieces. In a mixing bowl, add the cut steak and drizzle with olive oil. Season with salt, pepper, and any additional spices you prefer. Toss to coat evenly.
  • Heat a skillet over medium-high heat. Add a little olive oil, then toss in the sliced red onion and bell pepper. Sauté for about 3-4 minutes until they start to soften and become fragrant. Remove from the skillet and set aside.
  • In the same skillet, add the marinated steak pieces. Cook for about 5-7 minutes, stirring occasionally, until the steak is browned and cooked to your desired level of doneness.
  • While the steak is cooking, prepare your Velveeta Shells and Cheese Bold according to the package instructions. Once cooked, stir in the cheese sauce and mix until the pasta is well-coated.
  • Once the steak is cooked and the vegetables are sautéed, add the veggies back into the skillet with the steak. Gently fold in the mac and cheese, ensuring everything is evenly distributed.
  • Warm the fajita size flour tortillas in a separate pan or microwave. Spoon the Mac and Cheese Steak Fajitas filling into each tortilla. Top with diced avocado and chopped cilantro if desired. Roll up the tortillas, and you’re ready to enjoy!
