Mandarin Pancakes

These Mandarin pancakes are SO EASY! With just three ingredients, they're perfect for wrapping savory or sweet fillings.

  • 2 cups all-purpose flour
  • 1 cup boiling water
  • 2 tablespoons sesame oil

  • In a large mixing bowl, combine the all-purpose flour with boiling water. Stir with a fork or chopsticks until the mixture begins to come together. Once it’s cool enough to handle, knead the dough for about 5-10 minutes until it's smooth and elastic.
  • Cover the dough with a damp kitchen towel and let it rest for at least 30 minutes.
  • After resting, divide the dough into 8 equal pieces. Take one piece and roll it out on a lightly floured surface until it’s very thin, about 6 inches in diameter.
  • Using a pastry brush, lightly coat one side of each pancake with sesame oil.
  • Heat a non-stick skillet over medium heat. Place one pancake in the skillet, cooking for about 1 minute on each side or until lightly golden. Remove and cover with a kitchen towel to keep warm. Repeat with the remaining pancakes.
  • Serve the Mandarin pancakes warm, either as a side for your favorite meal or as a wrap for your fillings of choice.

Notes

  • For a healthier twist, substitute half of the all-purpose flour with whole wheat flour.
  • If you don’t have sesame oil, you can use olive oil for a different flavor.
  • Mandarin pancakes can be made in advance and stored for later use.
