In a large mixing bowl, combine the all-purpose flour with boiling water. Stir with a fork or chopsticks until the mixture begins to come together. Once it’s cool enough to handle, knead the dough for about 5-10 minutes until it's smooth and elastic.
Cover the dough with a damp kitchen towel and let it rest for at least 30 minutes.
After resting, divide the dough into 8 equal pieces. Take one piece and roll it out on a lightly floured surface until it’s very thin, about 6 inches in diameter.
Using a pastry brush, lightly coat one side of each pancake with sesame oil.
Heat a non-stick skillet over medium heat. Place one pancake in the skillet, cooking for about 1 minute on each side or until lightly golden. Remove and cover with a kitchen towel to keep warm. Repeat with the remaining pancakes.
Serve the Mandarin pancakes warm, either as a side for your favorite meal or as a wrap for your fillings of choice.
