Ingredients

For the Meatballs:

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste

For the Mashed Potatoes:

  • 2 pounds potatoes peeled and diced
  • 1/2 cup milk
  • 4 tablespoons butter

For Assembling:

  • 1 cup shredded cheddar cheese
  • 1/2 cup turkey bacon cooked and chopped
  • 2 cups marinara sauce

Instructions

Prepare the Meatballs

  • In a large mixing bowl, combine the ground beef, breadcrumbs, parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix gently until just combined. Form into small meatballs about 1 to 1.5 inches in diameter.

Cook the Meatballs

  • Heat a skillet over medium heat and cook the meatballs until browned on all sides and cooked through, about 8-10 minutes. Alternatively, bake in a preheated oven at 375°F (190°C) for 15-20 minutes. Set aside once cooked.

Make the Mashed Potatoes

  • Place peeled and diced potatoes in a large pot, cover with water, and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain well. Return potatoes to pot, add butter and milk, and mash until smooth and creamy. Season with salt and pepper to taste.

Assemble the Casserole

  • Preheat oven to 375°F (190°C). Spread half the marinara sauce evenly in a baking dish. Layer half the meatballs over the sauce, then spoon remaining marinara sauce on top. Spread half the mashed potatoes evenly, then sprinkle half the shredded cheddar cheese and half the chopped turkey bacon.
  • Repeat layering with remaining meatballs, marinara sauce, mashed potatoes, cheddar cheese, and turkey bacon.

Bake and Serve

  • Bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly and casserole is heated through. Let cool a few minutes before serving.

Equipment

  • Large Mixing Bowl
  • Skillet
  • Large Pot
  • Baking Dish

Notes

  • Use Yukon Gold or Russet potatoes for creamy, fluffy mashed potatoes.
  • Don't overmix the meatball mixture to keep meatballs tender and juicy.
  • Make sure turkey bacon is crispy before adding to casserole for texture.
  • Leftovers reheat well covered in oven or microwave.
  • Try vegetarian or gluten-free variations by substituting ingredients as suggested.
