Ingredients

  • 2 tablespoons olive oil provides a rich flavor and keeps chicken moist
  • 1 tablespoon Italian seasoning mix of herbs for Italian flavor
  • 1/2 teaspoon kosher salt enhances flavors
  • 1 tablespoon dark balsamic vinegar adds a sweet tang
  • 3 cloves garlic minced, for aromatic goodness
  • 4 pieces boneless and skinless chicken breasts 6 to 8 ounces each
  • 2 cups cherry tomatoes cut in half
  • 1/4 cup fresh basil roughly chopped

Instructions

  • Preheat your oven to 400°F (200°C) for even cooking.
  • In a mixing bowl, combine olive oil, Italian seasoning, kosher salt, dark balsamic vinegar, and minced garlic. Whisk until well combined.
  • Place the chicken breasts in the baking dish and pour the marinade over them, letting sit for about 10 minutes.
  • Scatter halved cherry tomatoes around the chicken in the baking dish.
  • Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 15-20 minutes until chicken reaches 165°F (75°C).
  • Remove from oven, sprinkle with fresh basil, and serve hot.
