Ingredients

  • 4 Tbsp butter melted
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 1 tsp taco seasoning
  • 2 cups chopped cooked chicken
  • 2 cups cooked Mexican or Spanish rice
  • 2 cups chicken broth
  • to taste Black pepper

  • Step 1: Preheat the Oven - Begin by preheating your oven to 400°F (200°C). This will ensure that your cobbler bakes evenly.
  • Step 2: Prepare the Chicken and Rice Mixture - In a large mixing bowl, combine the chopped cooked chicken, cooked Mexican or Spanish rice, and chicken broth. Stir in the taco seasoning and season with black pepper to taste. Make sure everything is well mixed, then pour this mixture into your greased 9x13-inch baking dish.
  • Step 3: Make the Biscuit Topping - In another bowl, whisk together the all-purpose flour, baking powder, and salt. Add the milk and melted butter, stirring until just combined. Be careful not to overmix; a few lumps are okay.
  • Step 4: Assemble the Cobbler - Using a spatula, dollop the biscuit batter over the chicken and rice mixture. Spread it out lightly to cover as much of the filling as possible.
