  • 1/2 cup light brown sugar packed, adds caramel notes.
  • 1/4 cup granulated sugar sweetness and texture.
  • 2 large eggs at room temperature, binds the ingredients.
  • 2 teaspoons vanilla extract for extra flavor.
  • 1/4 cup milk at room temperature, adds moisture.
  • 1/4 cup honey natural sweetener with a unique flavor.
  • 1 and 1/2 cups mashed bananas very ripe, the star ingredient!

Instructions:

  • Step 1: Preheat your oven to 350°F (175°C). This ensures that your banana bread bakes evenly.
  • Step 2: Grease your 9x5 inch loaf pan with butter or a non-stick spray. Alternatively, you can line the pan with parchment paper for easy removal.
  • Step 3: In a large mixing bowl, whisk together the all-purpose flour, baking soda, salt, nutmeg, and cinnamon.
  • Step 4: In another bowl, combine the melted butter and oils. Add in the light brown sugar and granulated sugar, mixing until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract, milk, honey, and mashed bananas until everything is incorporated.
  • Step 5: Pour the wet mixture into the bowl with the dry ingredients. Using a spatula, gently fold the ingredients together until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  • Step 6: Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Step 7: Once baked, allow it to cool in the pan for about 10 minutes. Transfer to a cooling rack to cool completely before slicing.
