Ingredients

  • 1 cup filtered water
  • 1 tablespoon fresh ginger sliced
  • ½ tablespoon fresh turmeric sliced (or ½ teaspoon ground turmeric)
  • ¼ cup fresh mint leaves
  • cup pineapple core chunks diced
  • teaspoon pink Himalayan salt
  • 1 teaspoon loose oolong tea or 1 oolong tea bag, tag removed
  • 1 lemon verbena tea bag, tag removed
  • 1 squeeze fresh lemon juice

Optional

  • 1 teaspoon raw apple-cider vinegar
  • 1–2 teaspoons raw honey

Instructions

  • In a small saucepan, combine the water, ginger, turmeric, mint, pineapple core, and salt.
  • Warm over medium-low heat until tiny bubbles appear (about 190 °F / 88 °C).
  • Remove from heat, add the oolong tea and lemon verbena tea bag, cover, and steep 5 minutes.
  • Stir in the apple-cider vinegar and lemon juice.
  • Strain into a pre-warmed mug, taste, and sweeten with honey if desired.
  • Serve hot, or chill and refrigerate up to 3 days.

Notes

• For a cold-brew, steep all ingredients in cool water in a sealed jar in the refrigerator for 8–12 hours, then strain.
• Freeze leftover pineapple cores in 1-inch chunks; they double as flavor-packed ice cubes.
