  • 2/3 cup unsweetened cocoa powder
  • 1 cup whole roasted unsalted almonds
  • 1 tbsp honey or agave (if vegan)
  • 2 tbsp water (or more if needed)
  • 3 tbsp confectioner's sugar for rolling

  • Begin by soaking the pitted dates in warm water for about 10 minutes to soften them. This will make them easier to blend.
  • In a food processor, combine the soaked dates, cocoa powder, roasted almonds, honey or agave, and 2 tablespoons of water. Pulse until the mixture is well combined and reaches a dough-like consistency. If it seems too dry, add more water, one teaspoon at a time.
  • Once the mixture is ready, take small portions and roll them into balls, roughly 1 inch in diameter. Place each ball onto a parchment-lined baking sheet.
  • After forming all the balls, roll them in confectioner's sugar to coat. This not only adds sweetness but also gives them that snowy appearance.
  • Refrigerate the snow balls for at least 30 minutes to firm up. This step is crucial for the perfect texture!
