Ingredients

  • 3 cups all-purpose flour
  • 1 cup oats (old-fashioned or quick oats will work)
  • 1 teaspoon salt
  • 1 teaspoon active dry yeast
  • 2 tablespoons honey
  • 2 cups warm water (about 110°F)

Instructions

  • In a large mixing bowl, combine the all-purpose flour, oats, salt, and active dry yeast. Stir well to ensure that all the dry ingredients are evenly distributed.
  • Make a well in the center of the dry mixture and pour in the warm water and honey. Use a wooden spoon or spatula to gently mix the ingredients until they are just combined. The dough will be sticky, which is perfectly normal for this no-knead bread.
  • Cover the bowl with plastic wrap or a kitchen towel and place it in a warm, draft-free area. Allow the dough to rise for about 12 to 18 hours.
  • After the rising time has elapsed, the dough should have doubled in size and be bubbly on the surface. Lightly flour your work surface and turn the dough out onto it. Gently shape the dough into a round loaf.
  • Place the shaped dough into a greased loaf pan or Dutch oven and cover it again. Allow it to rise for another 30 minutes to an hour.
  • While the dough is rising, preheat your oven to 375°F (190°C).
  • Once the dough has completed its second rise, place it in the preheated oven. Bake for about 30 to 40 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  • Remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a cooling rack. Allow it to cool completely before slicing.

Equipment

  • Large Mixing Bowl
  • Wooden Spoon or Spatula
  • Plastic wrap or kitchen towel
  • Loaf pan or Dutch oven
  • Cooling rack

Notes

  • Patience is key; don’t rush the rising times.
  • Keep the dough sticky; avoid overworking it.
  • Allow the bread to cool completely before slicing to prevent a gummy texture.
