Start by grating the sharp white cheddar cheese if you haven’t done so already.

Next, fold in the freshly grated sharp white cheddar cheese and the drained pimentos. Gently mix until everything is evenly combined.
Stir in the mayonnaise, garlic powder, onion powder, smoked paprika, and a pinch of kosher salt and pepper. Mix until all ingredients are well incorporated.
Give your pimento cheese a taste and adjust the seasoning if necessary.
Transfer the pimento cheese to a serving dish and sprinkle the top with chopped fresh chives. Refrigerate for at least one hour before serving.
