Ingredients

  • 12 ounces sharp white cheddar cheese freshly grated
  • 8 ounces cream cheese softened
  • 4 ounces pimentos drained
  • 1/3 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • to taste Kosher salt and pepper
  • 2 tablespoons chopped fresh chives for topping

Instructions

  • Start by grating the sharp white cheddar cheese if you haven’t done so already.
  • In a large mixing bowl, add the softened cream cheese. Using a hand mixer or stand mixer, beat it until smooth and creamy.
  • Next, fold in the freshly grated sharp white cheddar cheese and the drained pimentos. Gently mix until everything is evenly combined.
  • Stir in the mayonnaise, garlic powder, onion powder, smoked paprika, and a pinch of kosher salt and pepper. Mix until all ingredients are well incorporated.
  • Give your pimento cheese a taste and adjust the seasoning if necessary.
  • Transfer the pimento cheese to a serving dish and sprinkle the top with chopped fresh chives. Refrigerate for at least one hour before serving.
