Step 1: Prepare the Beans - Soak the giant beans in plenty of water overnight. The next day, drain and rinse the beans before boiling them in a large pot of fresh water for about 30 minutes, or until tender but not mushy.
Step 2: Sauté the Aromatics - In a large skillet, heat 100 ml of olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5-7 minutes. Add the chopped garlic and cook for an additional minute.
Step 3: Add the Vegetables - Incorporate the sliced red peppers, chopped celery, and thinly sliced carrots into the skillet. Season with salt and pepper. Cook for another 5 minutes.
Step 4: Combine with Tomatoes - Pour in the crushed tomatoes and mix well. Allow the mixture to simmer for about 10 minutes.
Step 5: Mix in the Dill and Beans - Stir in the chopped dill and the pre-cooked giant beans. Mix gently to combine.
Step 6: Bake the Dish - Preheat your oven to 180°C (350°F). Transfer the mixture to an oven-safe baking dish. Drizzle the remaining olive oil on top, cover with aluminum foil, and bake for 45 minutes.
Step 7: Finishing Touches - Remove the foil and bake for an additional 15 minutes. Let it cool for a few minutes before serving.
