Ingredients

For the Potatoes:

  • 1.5 lbs potatoes peeled and cut into large wedges
  • 6-8 cloves garlic minced
  • cup olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper fresh coarse ground
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon dried oregano
  • 1 teaspoon dried marjoram
  • ¼ teaspoon red pepper flakes (optional)
  • 1 tablespoon lemon zest (optional)
  • 1.5 tablespoons capers
  • ¼ red onion thinly sliced
  • ½ cup feta cheese crumbled
  • cup kalamata olives
  • 6-8 pieces piquante red peppers
  • Green onion chopped
  • Chives chopped
  • Fresh oregano and marjoram for garnish

Instructions

Instructions:

  • Step 1: Preheat the oven to 425°F (220°C) for crispy potatoes.
  • Step 2: Wash and peel the potatoes if desired, then cut them into large wedges (1-2 inches thick).
  • Step 3: In a large mixing bowl, combine minced garlic, olive oil, salt, black pepper, thyme, rosemary, oregano, marjoram, and red pepper flakes (if using). Mix in lemon zest for extra flavor.
  • Step 4: Add the potato wedges to the bowl and toss gently until they are coated in the seasoning mixture.
  • Step 5: Spread the seasoned wedges on a baking sheet lined with parchment paper, ensuring they aren't overcrowded.
  • Step 6: Bake for 30-35 minutes, flipping halfway through, until golden brown and fork-tender.
  • Step 7: Remove from oven, sprinkle with capers, red onion, feta, olives, and piquante peppers, then return to the oven for 5-10 minutes to warm toppings.
  • Step 8: Let cool slightly, garnish with chopped green onions, chives, and fresh herbs before serving.
