Ingredients

For the Spicy Cilantro Sauce:

  • 1 cup roughly chopped cilantro
  • 2 cloves garlic roughly chopped
  • 1/2 cup extra virgin olive oil
  • 2 teaspoons extra virgin olive oil
  • 3 tablespoons lemon juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground chili powder
  • Salt and pepper to taste

For the Steak:

  • 2 (10 to 12-ounce) flat iron steaks

Instructions

Method:

  • Step 1: Prepare the Spicy Cilantro Sauce. Add the chopped cilantro, garlic, 1/2 cup of olive oil, lemon juice, ground cumin, ground chili powder, and a pinch of salt and pepper into your blender or food processor. Blend until smooth, taste and adjust seasoning, then set aside.
  • Step 2: Season the Steak. Pat the flat iron steaks dry with paper towels, season both sides with salt and pepper generously.
  • Step 3: Heat the Skillet. Place your cast iron skillet over medium-high heat, add remaining 2 teaspoons of olive oil, heat until shimmering.
  • Step 4: Sear the Steak. Place the seasoned steaks in the skillet, sear for about 4-5 minutes without moving, then flip and cook an additional 4-5 minutes for medium-rare.
  • Step 5: Rest the Steak. Transfer cooked steaks to a cutting board, cover loosely with foil, and let rest for 5-10 minutes.
  • Step 6: Serve and Enjoy. Slice rested steaks against the grain, serve on a platter drizzled with spicy cilantro sauce.

Equipment

  • Cast-Iron Skillet
  • Blender or Food Processor
  • Meat Thermometer
  • Cutting Board
  • Sharp Knife

Notes

  • Make the spicy cilantro sauce up to three days in advance for deeper flavor.
  • Use a meat thermometer for perfect steak doneness.
  • Substitute flat iron steak with flank steak or sirloin if unavailable.
  • For less spice, reduce chili powder in the sauce.
  • Pair with sides like roasted vegetables or salads for a complete meal.
