Ingredients

  • 2 lbs boneless skinless chicken thighs
  • 1 cup peach preserves
  • 1/2 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • salt and pepper to taste

Instructions

Prepare the Chicken

  • Start by patting the chicken thighs dry with paper towels. In a small bowl, combine the garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this spice mixture evenly over both sides of the chicken thighs.

Sear the Chicken

  • Heat the olive oil in a large skillet over medium-high heat. Add the chicken thighs in a single layer. Sear them for about 3-4 minutes on each side until golden brown.

Mix the Peach-BBQ Sauce

  • In a separate bowl, combine the peach preserves and BBQ sauce. Stir until smooth and well blended.

Slow Cook the Chicken

  • Transfer the seared chicken thighs to a slow cooker or large pot. Pour the peach-BBQ sauce over the chicken. Cover and cook on low for 4-5 hours in a slow cooker, or simmer on low on the stove for 1.5 to 2 hours until tender.

Shred the Chicken

  • Remove the chicken from the cooker and shred using two forks. Return the shredded chicken to the sauce and stir well to coat.

Assemble the Sliders

  • Lightly toast slider buns. Pile the warm pulled chicken onto the buns. Add sliced jalapeƱos and top with coleslaw if desired. Serve immediately.
