Ingredients

  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup sugar
  • 2 large eggs room temperature
  • 2 tsp pure vanilla extract
  • 1/2 cup buttermilk or plain kefir room temperature

Instructions

Baking Instructions:

  • Step 1: Preheat your oven to 350°F (175°C) to ensure that your cupcakes bake evenly.
  • Step 2: Line your cupcake pan with cupcake liners, which not only add a pop of color but also make for easy removal.
  • Step 3: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  • Step 4: In a large mixing bowl, beat the softened unsalted butter and sugar together until light and fluffy.
  • Step 5: Add the room temperature eggs, one at a time, mixing well after each addition. Stir in the pure vanilla extract.
  • Step 6: Gradually add the flour mixture to the butter mixture, alternating with the buttermilk, mixing just until combined.
  • Step 7: Spoon the batter into the prepared cupcake liners, filling each about two-thirds full.
  • Step 8: Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
  • Step 9: Let the cupcakes cool in the pan for about 5 minutes, then transfer them to a cooling rack.
