Philly Cheesesteak Roll Ups

These Philly Cheesesteak Roll Ups are golden, flaky, and packed with tender beef, sautéed peppers and onions, and gooey provolone cheese. Perfect for a quick snack or meal!

Ingredients

  • 1 lb thinly sliced beef steak such as sirloin or ribeye
  • 1 tablespoon olive oil
  • 1 green bell pepper thinly sliced
  • 1 onion thinly sliced
  • 1 cup shredded provolone cheese
  • 1 package puff pastry sheets thawed
  • 1 egg beaten (for egg wash)
  • Salt and pepper to taste

Instructions

Prepare the Beef and Vegetables

  • Heat the olive oil in a large skillet over medium-high heat. Add the thinly sliced beef and season with salt and pepper. Cook the beef until browned and just cooked through, about 3-4 minutes, stirring occasionally. Remove the beef from the skillet and set aside.
  • In the same skillet, add the sliced green bell pepper and onion. Sauté until the vegetables are tender and slightly caramelized, about 5-7 minutes. Return the beef to the skillet and stir to combine with the vegetables. Remove from heat and let cool slightly.

Preheat the Oven and Prepare Puff Pastry

  • Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the thawed puff pastry sheets to smooth any creases. Cut each sheet into 6 equal rectangles (you should have 12 rectangles total if using two sheets).

Assemble the Roll Ups

  • Divide the beef and vegetable mixture evenly among the puff pastry rectangles, placing it on one half of each piece. Sprinkle shredded provolone cheese generously over the filling. Fold the other half of the pastry over the filling and press the edges to seal. Use a fork to crimp the edges for a decorative touch and to ensure they stay sealed during baking.

Apply Egg Wash and Bake

  • Brush the tops of each roll up with the beaten egg. This will give them a beautiful golden color and glossy finish. Place the roll ups on a baking sheet lined with parchment paper, leaving some space between each one.
  • Bake in the preheated oven for 15-20 minutes, or until the puff pastry is puffed, golden, and crispy. Remove from the oven and allow to cool for a few minutes before serving.
