Ingredients

  • 1 pound thinly sliced beef (ribeye or sirloin)
  • 1 tablespoon olive oil
  • 1 onion thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 red bell pepper thinly sliced
  • Salt and pepper to taste
  • 4 slices provolone cheese
  • 4 hoagie rolls
  • Turkey bacon optional, cooked and crumbled for added flavor

Instructions

Prepare the Vegetables and Meat

  • Begin by thinly slicing the onion, green bell pepper, and red bell pepper. Ensure the beef is sliced as thin as possible.

Cook the Turkey Bacon (Optional)

  • If using, cook turkey bacon in a skillet over medium heat until crisp. Drain on paper towels and crumble into small pieces.

Sauté the Vegetables

  • Heat olive oil in a skillet over medium-high heat. Add onions and bell peppers, season with salt and pepper, and cook until onions are golden and peppers soften, about 5-7 minutes.

Cook the Beef

  • Push vegetables to the side, increase heat to high, add beef, season with salt and pepper, and cook until browned, about 2-3 minutes. Mix beef with vegetables.

Melt the Cheese

  • Lower heat to medium, spread beef and vegetable mixture evenly, lay provolone slices on top, cover skillet for 1-2 minutes to melt cheese.

Assemble the Sandwiches

  • Slice hoagie rolls lengthwise and warm if desired. Spoon cheesy beef mixture into rolls. Sprinkle crumbled turkey bacon if using. Serve immediately.

Equipment

  • Large skillet or frying pan
  • Sharp Knife
  • Cutting Board
  • Tongs or spatula
  • Baking Sheet

Notes

  • Partially freeze beef before slicing for thinner, more tender strips.
  • Use mozzarella or cheddar cheese as tasty alternatives to provolone.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days and reheat in a skillet or oven to keep rolls crispy.
