Ingredients

Ingredients

  • 8 ounces cream cheese softened to room temperature
  • 1.5 cups extra sharp cheddar cheese shredded
  • 0.25 cup mayonnaise
  • 0.5 cup jarred pimento finely diced, approximately 4 ounces drained weight
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste
  • Red pepper flakes or cayenne pepper optional, to taste

Instructions

  • Step 1: Prepare Ingredients - Begin by gathering all your ingredients. Make sure the cream cheese is softened to room temperature for easy mixing. Shred the extra sharp cheddar cheese if it isn’t pre-shredded.
  • Step 2: Mix Cream Cheese and Mayonnaise - In a large mixing bowl, combine the softened cream cheese and mayonnaise. Use a hand mixer, stand mixer, or a spatula to blend them together until smooth and creamy.
  • Step 3: Add Cheddar Cheese - Once the cream cheese and mayonnaise are well combined, add in the shredded cheddar cheese. Stir gently to fold in the cheese, ensuring it’s evenly distributed throughout the mixture.
  • Step 4: Incorporate Pimentos - Next, take your jarred pimentos, drain them, and finely dice them if they aren’t already. Fold the pimentos into the creamy cheese mixture gently, trying not to break them apart too much.
  • Step 5: Season the Mixture - Sprinkle in the onion powder and garlic powder. Season with salt and black pepper to taste. If you like a bit of heat, feel free to add red pepper flakes or cayenne pepper as desired.
  • Step 6: Chill and Serve - Transfer your pimento cheese to a serving bowl and cover it with plastic wrap. Refrigerate for at least 30 minutes to allow the flavors to meld together. Serve chilled with an array of crackers, veggies, or your choice of bread.

Equipment

  • Mixing Bowl
  • Hand Mixer

Notes

For the best flavor, allow your pimento cheese to chill in the refrigerator for several hours or overnight before serving. Use freshly shredded cheese instead of pre-packaged shredded cheese for a creamier texture since freshly shredded cheese melts better.
