Lay a tortilla flat on a clean surface. Spread a generous amount of the pizza hummus filling onto the center of the tortilla. Sprinkle with some shredded mozzarella cheese and a handful of mini pepperoni. Roll the tortilla tightly, ensuring the filling is secure inside. Repeat this process for the remaining tortillas.
Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper or lightly greased with cooking spray. Spray the tops lightly with cooking spray for extra crispiness. Bake in the preheated oven for about 15-20 minutes, or until golden brown and crispy.
Once baked, remove the taquitos from the oven and let them cool for a minute before serving.
