Pizza Quinoa Casserole (Vegan!)

This Pizza Quinoa Casserole is a hearty and nutritious dish that satisfies all your pizza cravings!

Ingredients

  • 1 cup white quinoa (uncooked)
  • 1 yellow onion
  • 1 green bell pepper
  • 8 oz. mushrooms
  • 4 cloves garlic
  • 1 cup fresh baby spinach
  • 3 roma tomatoes
  • 15 oz. can tomato sauce
  • 3/4 cup vegan mozzarella shreds
  • 2 tsp. Italian seasoning
  • 2 Tbsp. fresh basil (for serving)

Instructions

  • Rinse 1 cup of white quinoa under cold water. In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes or until all the water is absorbed. Fluff with a fork and set aside.
  • In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced yellow onion and sauté until translucent, about 3-4 minutes. Then add the chopped green bell pepper, sliced mushrooms, and minced garlic. Cook for an additional 5-7 minutes, stirring occasionally, until the mushrooms are tender and the mixture is fragrant.
  • Add the cooked quinoa to the skillet with the sautéed vegetables. Stir in the fresh baby spinach, diced roma tomatoes, tomato sauce, Italian seasoning, and half of the vegan mozzarella shreds. Mix thoroughly until everything is well combined.
  • Preheat your oven to 375°F (190°C). Transfer the quinoa mixture to a baking dish, spreading it evenly. Top with the remaining vegan mozzarella shreds.
  • Bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly. Remove from the oven and let it cool for a few minutes before serving.
