Ingredients

For the Cheese Spread:

  • 1.5 cups raw cashews soaked
  • 2 tablespoons nutritional yeast plus more to taste
  • 1 clove garlic minced
  • 0.5 teaspoon salt
  • 1 whole lemon zested and juiced
  • 0.5 cups water plus 1 tablespoon
  • 8 stalks chives finely diced
  • 0.25 cups parsley finely chopped

Instructions

Instructions:

  • Step 1: Soak the cashews in water for at least 2 hours, or hot water for 30 minutes.
  • Step 2: Drain the cashews and blend them with nutritional yeast, garlic, salt, lemon zest, lemon juice, and water until smooth.
  • Step 3: Adjust consistency by adding more water if needed, and season to taste.
  • Step 4: Fold in the chives and parsley.
  • Step 5: Chill in the refrigerator for at least 30 minutes before serving.
