Ingredients

  • 1 pound ground beef
  • 1 cup mashed potatoes preferably homemade or store-bought, warmed
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh parsley for garnish

Instructions

Prepare the Meatball Mixture

  • In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix gently until evenly incorporated without overmixing.

Form the Meatballs

  • Shape the mixture into small meatballs, about 1 to 1.5 inches in diameter, making roughly 16 meatballs. Place on a baking sheet lined with parchment paper or greased to prevent sticking.

Bake the Meatballs

  • Preheat oven to 375°F (190°C). Bake the meatballs for 15-20 minutes until cooked through and browned, turning halfway for even color. Remove and set aside.

Assemble the Bake

  • In a medium baking dish, spread mashed potatoes evenly on the bottom. Arrange cooked meatballs on top, then pour marinara sauce over everything.

Add Cheese and Bake

  • Sprinkle shredded mozzarella cheese generously over the dish. Bake at 375°F (190°C) for another 15 minutes until cheese is melted and bubbly.

Garnish and Serve

  • Garnish with fresh chopped parsley. Let cool slightly before serving. Pairs well with a green salad or steamed vegetables.
