Ingredients

For the Custard:

  • 4 large eggs
  • 1 cup buttermilk or milk + vinegar for tanginess
  • 2 tablespoons sugar or sweetener for sweetness
  • 2 teaspoons pure vanilla extract enhances flavor
  • 2 tablespoons unsweetened cocoa powder for chocolate flavor
  • 2 teaspoons red food coloring for color

For the Filling:

  • 8 slices bread brioche or challah preferred
  • 8 oz reduced-fat cream cheese for creaminess
  • 2 tablespoons sugar or sweetener for cream cheese
  • 1 teaspoon vanilla bean paste adds richness
  • 1 handful fresh raspberries for garnish

Instructions:

  • In a large mixing bowl, whisk together the eggs, buttermilk, sugar, vanilla extract, cocoa powder, and red food coloring until smooth.
  • In another bowl, beat the cream cheese, sugar, and vanilla bean paste until creamy.
  • Spread the cream cheese mixture on one slice of bread, then top with another slice to make a sandwich. Repeat with remaining bread.
  • Dip each sandwich into the custard mixture, soaking briefly on each side.
  • Heat a frying pan over medium heat, lightly greased. Cook sandwiches for 3-4 minutes on each side until golden brown.
  • Transfer to serving plates and garnish with fresh raspberries and powdered sugar. Serve with maple syrup if desired.
