Ingredients

For the Refried Beans:

  • 2 cups cooked pinto beans (drained, with cooking liquid reserved or 1 (15-ounce) can)
  • 1 tablespoon olive oil
  • ½ cup chopped onion (optional)
  • 2 cloves garlic (minced, optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper

Instructions

Instructions:

  • Step 1: Prepare Your Beans - If you’re using dried beans, soak them overnight and then cook them until tender. If you’re using canned beans, simply drain them and rinse under cold water. Reserve some of the cooking liquid for later use.
  • Step 2: Heat the Oil - In a large skillet, heat the olive oil over medium heat. This step is crucial as it helps to infuse the oil with flavor.
  • Step 3: Sauté the Aromatics - If you’re adding onion and garlic, toss them into the skillet once the oil is hot. Sauté for about 3-4 minutes until the onion is translucent and the garlic is fragrant.
  • Step 4: Add the Beans - Add the cooked pinto beans to the skillet. If you’re using canned beans, add them along with a splash of the reserved cooking liquid (or water) to help with mashing.
  • Step 5: Season it Up - Sprinkle in the ground cumin, kosher salt, and ground black pepper. Stir well to combine all the ingredients.
  • Step 6: Mash the Beans - Using a wooden spoon or a potato masher, mash the beans to your desired consistency. For creamier refried beans, add more of the reserved liquid and continue mashing.
  • Step 7: Simmer and Serve - Allow the beans to simmer for a few minutes to meld the flavors, then taste and adjust the seasoning if needed. Serve warm as a side dish or as a filling for burritos, tacos, or nachos.

Equipment

  • Skillet
  • Wooden Spoon or Spatula
  • Measuring Spoons

Notes

  • For a smoother texture, blend the beans in a food processor after mashing.
  • If you like a bit of heat, add diced jalapeños while sautéing the onion.
  • Experiment with different beans, like black beans or kidney beans, for variety.
