A simple remoulade sauce made with mayonnaise, mustard, hot sauce, paprika, garlic, scallion, and lemon juice. Chill briefly to let flavors meld and finish with chives if desired.

  • 1/2 cupmayonnaise orvegan mayo
  • 1 tablespoonmustard
  • 1 teaspoonhot sauce
  • 1/2 teaspoonpaprika
  • 2 garlic cloves grated
  • 1 scallion finely chopped
  • 1 teaspoonfresh lemon juice
  • 1/8 teaspoononion powder
  • Pinchof cayenne
  • Chives for sprinkling optional

  • Peel and grate the 2 garlic cloves; finely chop the 1 scallion.
  • In a small bowl combine ½ cup mayonnaise (or vegan mayo), 1 tablespoon mustard, 1 teaspoon hot sauce, ½ teaspoon paprika, the grated garlic, the chopped scallion, 1 teaspoon fresh lemon juice, 1/8 teaspoon onion powder, and a pinch of cayenne.
  • Whisk or stir the mixture until it is smooth and evenly combined.
  • Cover and refrigerate for at least 30 minutes, if possible, to let the flavors meld (optional).
  • Transfer to a serving bowl and sprinkle with chives, if using.
