Start by bringing a large pot of salted water to a boil. Add the uncooked penne and cook according to package directions until al dente. This usually takes about 10-12 minutes. Stir occasionally to prevent sticking.
Once the pasta is cooked, reserve about 1 cup of the pasta water, then drain the rest using a colander. Set the drained pasta aside.
In a large skillet over medium heat, add a splash of olive oil. Once hot, add the fresh baby spinach. Sauté for about 2-3 minutes, just until the spinach wilts down.
Add the drained penne to the skillet with the spinach. Lower the heat and then add the Boursin Fine Herbs & Garlic cheese. Stir well to combine, allowing the cheese to melt and coat the pasta evenly.
If the pasta seems too thick, gradually add some of the reserved pasta water, a little at a time, until you reach your desired creaminess.
