Ingredients

Vegetables

  • 6 medium carrots peeled
  • 1 large head broccoli cut into florets

Seasonings

  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper

Other

  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons finely grated Parmesan cheese optional for serving

Instructions

Preparation Steps

  • Step 1: Preheat the Oven - Start by preheating your oven to 425°F (220°C). This high temperature is ideal for roasting vegetables, as it helps achieve that lovely caramelization.
  • Step 2: Prepare the Vegetables - Peel the carrots and chop them into bite-sized pieces. Cut the broccoli into florets. Make sure the pieces are roughly the same size for even cooking.
  • Step 3: Toss with Seasonings - In a large mixing bowl, combine the carrots and broccoli florets. Drizzle with the extra-virgin olive oil, then sprinkle the Italian seasoning, kosher salt, garlic powder, onion powder, and ground black pepper over the top. Toss everything together until the vegetables are well coated.
  • Step 4: Arrange on a Baking Sheet - Spread the seasoned vegetables in a single layer on a large baking sheet. Make sure they have enough space between them to allow for proper roasting.
  • Step 5: Roast in the Oven - Place the baking sheet in the preheated oven and roast for about 20-25 minutes, or until the broccoli is tender and the carrots are caramelized. Halfway through cooking, give the vegetables a quick stir to ensure they roast evenly.
  • Step 6: Serve and Enjoy - Once roasted to perfection, remove the vegetables from the oven. If desired, sprinkle with finely grated Parmesan cheese before serving. Enjoy your roasted broccoli and carrots as a delicious side dish to your favorite meals!
