Roasted Garlic Lentil Dip

This Roasted Garlic Lentil Dip is a creamy, nutrient-packed snack that's irresistible with veggies or chips!

Ingredients

  • 1 cup split red lentils
  • 3 cups water or stock
  • 6-8 cloves garlic
  • 1 medium lemon Juice of
  • 1/2 cup Italian parsley roughly chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3-4 tablespoons olive oil

Instructions

  • Preheat your oven to 400°F (200°C). Peel the garlic cloves, place them on a baking sheet, drizzle with olive oil, wrap in foil, and roast for 20-25 minutes until soft.
  • In a pot, combine the split red lentils and water (or stock). Bring to a boil, then reduce heat to a simmer and cook for 15-20 minutes until tender.
  • In a food processor, combine cooked lentils, roasted garlic, lemon juice, parsley, salt, pepper, and remaining olive oil.
  • Blend until smooth. Add a splash of water or olive oil if too thick.
  • Taste and adjust seasoning; add more lemon juice or salt as desired.
  • Transfer to a serving bowl, drizzle with olive oil, garnish with parsley, and serve with pita chips or veggies.

Notes

  • Store in an airtight container in the fridge for up to 5 days.
