Preheat your oven to 400°F (200°C). Peel the garlic cloves, place them on a baking sheet, drizzle with olive oil, wrap in foil, and roast for 20-25 minutes until soft.
In a pot, combine the split red lentils and water (or stock). Bring to a boil, then reduce heat to a simmer and cook for 15-20 minutes until tender.
In a food processor, combine cooked lentils, roasted garlic, lemon juice, parsley, salt, pepper, and remaining olive oil.
Blend until smooth. Add a splash of water or olive oil if too thick.
Taste and adjust seasoning; add more lemon juice or salt as desired.
Transfer to a serving bowl, drizzle with olive oil, garnish with parsley, and serve with pita chips or veggies.
