Ingredients

  • 6 pieces chicken thighs
  • 6 cloves garlic sliced into halves
  • to taste Salt
  • to taste freshly ground black pepper
  • 1 Tbsp vegetable oil
  • 2 pieces lemons divided
  • 1 Tbsp chopped fresh poultry herbs (such as rosemary, thyme, marjoram, oregano, or sage; a blend of two or three is recommended)
  • to taste extra herbs for serving (optional)

Instructions

  • Begin by preheating your oven to 400°F (200°C) to ensure your chicken roasts perfectly.
  • In a large mixing bowl, combine the sliced garlic, vegetable oil, juice of one lemon, and chopped fresh herbs. Season with salt and pepper.
  • Add the chicken thighs to the bowl and marinate for at least 30 minutes or up to 2 hours.
  • Arrange the chicken thighs in a roasting pan, tucking halved garlic cloves around them and placing lemon slices on top.
  • Roast in the preheated oven for about 35-45 minutes, or until the chicken reaches 165°F (74°C).
  • Let the chicken rest for a few minutes before serving. Garnish with additional herbs if desired.
