  • Step 1: Preheat your oven to 425°F (220°C). A hot oven is essential for achieving that crispy exterior.
  • Step 2: Wash and scrub the Yukon potatoes thoroughly to remove any dirt. Cut them into even-sized wedges or cubes.
  • Step 3: In a large mixing bowl, combine the cut potatoes, olive oil, lemon zest, lemon juice, minced garlic, parsley, rosemary, salt, and pepper. Toss until well coated.
  • Step 4: Transfer the coated potatoes onto a large baking sheet, spreading them out in a single layer.
  • Step 5: Place the baking sheet in the preheated oven and roast for 30-35 minutes. Stir halfway through to ensure even browning.
  • Step 6: Check for doneness after 30 minutes. Potatoes should be golden brown and crispy. If needed, roast for an additional 5-10 minutes.
  • Step 7: Remove from the oven and garnish with additional chopped parsley if desired. Serve hot.
