Ingredients

Ingredients

  • 2 tablespoons olive oil
  • 2 pounds small red potatoes (halved)
  • 1 teaspoon mustard seeds
  • ½ teaspoon red chili flakes
  • 2 teaspoons fresh ginger (minced)
  • 5 garlic cloves (minced)
  • 1 jalapeno (seeded and minced)
  • 1 teaspoon salt
  • 1 teaspoon ground turmeric
  • ½ teaspoon garam masala
  • ¼ cup fresh cilantro (chopped)
  • ¼ cup mint (chopped)
  • 1 tablespoon fresh lime juice
  • 6 lime wedges

Instructions

Instructions

  • Step 1: Preheat Your Oven - Start by preheating your oven to 425°F (220°C). This high temperature will ensure that your potatoes get nice and crispy.
  • Step 2: Prepare the Potatoes - In a large mixing bowl, combine the halved red potatoes with olive oil, salt, and the ground turmeric. Toss until the potatoes are evenly coated in the oil and spices.
  • Step 3: Add the Spices - In a small pan over medium heat, toast the mustard seeds until they begin to pop. This should take about 1-2 minutes. Once toasted, add them to the bowl of potatoes along with the minced ginger, garlic, red chili flakes, and jalapeno. Mix everything thoroughly to ensure the potatoes are well-seasoned.
  • Step 4: Roast the Potatoes - Spread the seasoned potatoes in a single layer on your baking sheet. Roast them in the preheated oven for about 25-30 minutes, or until they are golden brown and crispy. Be sure to flip the potatoes halfway through the cooking time for even roasting.
  • Step 5: Add Fresh Herbs and Lime Juice - Once the potatoes are done roasting, remove them from the oven and toss them with chopped cilantro, mint, and fresh lime juice. The herbs will add a fresh burst of flavor that complements the spices beautifully.
  • Step 6: Serve and Enjoy - Serve your Roasted Potatoes with East Indian Spices hot, garnished with lime wedges. They make a wonderful side dish for a variety of meals or can be enjoyed on their own as a flavorful snack.
